Locro is the iconic dish served to celebrate Argentina's National Day (May 25), a tradition linked to the May Revolution of 1810 and the country's history of independence.
You will enjoy a wine tasting with your sommelier, focusing on hearty winter dishes (aromas, textures, slow reduction, flavors).
First course: Torta frita (fried cake), pickled aubergines, and Patagonian wild game.
Second course: Knife-cut beef empanadas, cooked on a griddle over open flames and smoked over white quebracho wood, and the traditional empanada filled with cheese and braised ham (homemade dough fried in animal fat).
Third course: Traditional locro (featuring squash, white corn, pallares beans, red chorizo, bacon, and beef, slow-cooked to a creamy consistency, served with a ground chili and green onion sauce.)
Fourth course: Dessert (optional: Homemade flan / cheese and sweet potato or quince 'vigilante')
Each course will be paired with the corresponding wine variety (red and white).
