Join a small-group pastry atelier limited to 8 participants and discover the techniques behind the canelé, Bordeaux's iconic pastry. Together, you will prepare a full batch of canelés, learning the essential steps that create their signature contrast between a deeply caramelized exterior and a soft, custardy center. The experience begins with an introduction to their history and key technical principles.

You will then move into the preparation process, focusing on batter consistency, mould preparation, and baking technique—essential elements for achieving an authentic canelé.

While the canelés bake, explore another specialty of Southwest France: the Gâteau Basque. Prepare and decorate your own pastry, choosing between a pastry cream or traditional jam filling, with guidance throughout the process.

The experience concludes with a tasting of both pastries, accompanied by a beverage in the atelier.

Each participant will prepare their own Gâteau Basque, choosing between traditional pastry cream or jam filling.
