Kitsune Udon is a popular Osaka dish made with udon noodles topped with sweet-salty simmered fried tofu (aburaage) in a dashi broth made from kombu and bonito flakes. Osaka udon is known for its chewy texture and balanced flavor. Udon, once a special dish for temples, became an everyday food in Japan by the Edo period. Kitsune Udon originated in 1893 at Matsubaya, when customers added fried tofu to their udon. The dish showcases Osaka’s love for dashi and flour-based foods.
Kayaku Gohan is a rice dish popular in Osaka and Kansai, made by mixing burdock and carrots with rice. Its origins trace back to the Muromachi period, when "hōhan," a dish of seasoned vegetables served over rice with clear soup, was enjoyed by monks and the upper class before spreading to the common people. The name “kayaku” comes from a term used in Chinese medicine. Kayaku” means the addition of a supplementary drug to enhance the effect of the main ingredient, and from this meaning, mixing is expressed as ”kayaku.
