Make fresh fettuccine and tiramisù near the Vatican, and learn to pair each course with a different wine from the Lazio region around Rome.
This is a cooking class built around wine. Most visitors to Rome have never tasted the wines made in the hills just outside the city, and this class teaches you how they work with the region's food.
You start with a glass of Frascati and bruschetta while your host introduces the wine areas around Rome. Then you knead and cut fresh fettuccine by hand and prepare a traditional Roman sauce. Before you eat, you taste the sauce on its own, then with a glass of Cesanese, a red grape grown mostly in Lazio, so you can see how the wine changes the flavor.
Next you prepare tiramisù step by step and serve it with a sweet Lazio wine. Finally, you sit down to enjoy your three courses with your three wines. You'll take home a pairing card to recreate the dinner at home, plus a certificate of participation.
