After pick-up at your hotel or port la Goulette Going to Zaghouan means preparing for a bucolic day in the heart of a town that jealously preserves its Andalusian heritage. From Tunis, the road runs alongside a partly restored Roman aqueduct, a reminder that since ancient times, Tunis has been supplied with spring water from the mountain overlooking Zaghouan. Along the way, archaeology buffs will appreciate the site of Oudna, a Punic city that became Roman. The villa known as the "Laberii", with its 30 rooms spread over 2,300 m², is well worth a visit for its mosaics.
Thirty kilometers away, Zaghouan stands on the green slopes of the mountain of the same name. A small town of Andalusian ceramics and hanging balconies, it's an invitation to stroll and discover.
Arrival in Zaghouan
The first stop is to visit the Nymphée or Temple des Eaux, which marks the site of the spring. This semi-circular collection basin was a public fountain, under the protection of Neptune. There's a café adjacent to the temple, in a small park planted with trees, where you can quench your thirst.
We head for the heights of the town to discover its Andalusian soul. A refuge for Moorish fugitives from the Inquisition, the town's traditions include the distillation of rosehips, the water from which is used to flavour "Kaak Ouarka", a delicious local pastry.
We'll visit the Temimi Foundation, in the heart of the historic center, which preserves documents on the Moriscos and their relationship with the Mediterranean environment. We'll make a wish at the zaouia of Sidi Ali Azouz, patron saint of the town, whose mausoleum is a marvel of Arab-Andalusian architecture.
After lunch not far away, the ancient village of Zriba Olia (Zriba la haute), of Berber origin, is located some three kilometers south of Hammam Zriba. Built between two rocky peaks, the now-ruined village overlooks Jebel Zaghouan, Tunisia's fourth-highest peak after Jebel Chambi.
In the middle of the old village stands a zawiya dedicated to Sidi Abdel Kader Jilani, founder of the Qadiriyya and buried in Baghdad. This zawiya, built in the 17th century, has been extensively restored; it contains antique architectural elements and served as a Koranic school (kouttab) for young villagers.
Zriba was deserted by its inhabitants in the 1960s, following the development of the new town on the plain. In 2010, the four or five families still living there total around twenty souls. Most of the ruined, vaulted houses are used as sheepfolds.
And so the journey through time, between Roman and Berber history and contemporary life, ends with the conclusion that the beauty of Tunisia is none other than this mix of all times and all histories.
