There is a banitsa shop that hasn’t changed its recipe in forty years. The interior is not changed since I was a kid. Every morning, before the city wakes up, people stop here on their way to work they order, they eat standing, they leave. Nobody sits down.

That is where we start...

From there we get the yellow tram and ride. Nobody on this tram is a tourist.
We get off at the mineral springs. Sofia sits on geothermal water did you know that? It has been running here for longer than this city has had its name. Every morning local people arrive with plastic bottles and fill them up. We drink from the spring.

Then we walk into the old town

Then we walk the most famous streets of the old town. This pedestrian street had its golden years before the war. The shopfronts, the tiles, the rhythm of it. Tourists miss it because there are no monuments on it. That is exactly why we are here. We find a hidden passage where a local woman has been running her small cafe for years. We have time there to enjoy the kind of place that simply refused to change, and so kept everything. We sit. We drink. We do not rush. This is the stop that guests remember most, always. Not the monument. Not the museum. This passage, this cafe, this woman.

After that, the market. The colour is overwhelming. The noise is comfortable. We find the mekitsa stand and we eat mekitsa. We watch the market around us and I tell you what the vendors are actually saying to each other.

And then we end on a rooftop, with Vitosha Mountain sitting at the end of the horizon and a cup of Bulgarian tea in your hand, a mountain herbal tea. We sit for a while. We talk about what surprised you.

No churches explained from the outside. No communist history lecture. No tourist restaurant recommendation. Three hours of the city as it actually is — and you go home having eaten four things, ridden the tram, drunk from a spring, and understood something that most visitors never find.
