At Oiharte, cider-making begins with a deep love for apples. The producer personally manages the orchards and believes that, with careful observation and proper care, apple trees can produce a stable harvest every year. Even as climate change brings unpredictable weather, the trees are watched closely, and pruning is done at the right moment to support their natural rhythm.
This is more than a job—it is also a passion. The orchard is managed with respect for biodiversity, leaving some grass uncut to protect the ecosystem. The cider itself is made mainly from one apple variety, blended with a smaller portion of a sharper, more acidic variety to create balance.
