The class takes place in a comfortable community kitchen in central Nagoya, just one subway stop from Sakae and a short walk from the nearest station, making it easy to join during your trip.

Your experience begins with preparing ingredients together as we get ready to make one of Nagoya’s most addictive local dishes—Taiwan Mazesoba, a flavorful ramen loved by locals. Despite the name, it is not Taiwanese food! Why “Taiwan”? You’ll discover the story during class.

Unlike regular ramen, this dish is served without broth and topped with richly seasoned minced meat, fresh toppings, and a silky egg yolk, all mixed together for bold and satisfying flavors.

You’ll learn how to make the key element of the dish: a deeply flavorful minced meat topping with garlic and spices. One of the best things about this recipe is that it can easily be recreated at home using ingredients available outside Japan. Prefer mild flavors or enjoy extra heat? The spice level can be adjusted to your taste.

Next, it’s time to make crispy gyoza. Using my special homemade filling recipe, I’ll guide you step by step through the traditional folding technique so you can create beautiful gyoza with confidence, even if it’s your first time cooking. You’ll also learn simple tips for achieving that perfectly crispy, golden texture.

As delicious aromas fill the kitchen, we’ll cook the noodles and bring everything together. Once your meal is ready, sit down and enjoy the dishes you created yourself in a warm and relaxed atmosphere.

You’ll also discover a fun local way to enjoy every last bite of this ramen until the very end.

During the meal, let’s chat about Nagoya, Japan, travel, and life in your country. I lived abroad for over 10 years in Singapore, the Philippines, and the United States, and joining local cooking classes helped me discover cultures in a deeper way.
