Step into a world of tradition and flavor at a soy sauce and miso brewery founded in 1911. Located in O-ono Town, Kanazawa—a historic port town known since the Edo period as one of Japan’s top five soy sauce-producing regions—Yamato Soy Sauce & Miso has been crafting fermented foods for over a century.

To share the wonders of koji (the magical fermentation starter) and the beauty of fermentation culture, Yamato established Koji Park, an interactive facility offering hands-on tours and tastings for visitors from Japan and abroad.

Wander through time as you explore the historic landmarks such as the charming red brick boiler, iconic chimney that seems to carry the scent of roasted wheat on the breeze, and traditional wooden storehouses that have been adapted to production spaces and shops—all set against the scenic backdrop of Kanazawa Port and the distant Hakusan and Tateyama mountain ranges. It’s the perfect blend of history and photogenic charm—just 15 minutes by car from Kanazawa Station.
Before or after the anctivity, enjoy shopping at the on-site product showroom, indulge in a cheesecake treat, or explore doburoku (cloudy sake) brewery.

Included in the activity are:
*Koji Park Tour & Koji Talk (12:00-12:30)
A guided tour of the facility featuring an entertaining and informative introduction to fermentation and the magic of koji. You will learn: 1. What’s Koji, 2. The Secret of Fermentation, and 3. How to promote gut health. Outside tour may not be available depending on weather conditions.

*Miso Soup Making & Tasting (12:30-13:00)
Make your own miso soup using simple recipes and two types of miso pastes aged from 6 to 12 months—compare the flavors and discover your favorite.

*Fermented Food Lunch (13:00-14:00)
Enjoy a beautiful lunch course made with generous use of koji and other fermented ingredients—nourishing from the inside out.

*Doburoku Tasting (14:00-14:30)
Taste two types of doburoku, a fermented rice beverage packed with koji, yeast, and lactic acid bacteria—a true superfood. Try two of the easy-to-drink craft doburoku, one flavored with Yuzu and the other with Black Currant, and enjoy a gentle buzz while cleansing your body from within.

*After the Tour
You can continue browsing and shopping at your leisure in the KojiPark facility.
