From 18:30 to 20:30, Khokana, Taste of Thakali — a women-led family restaurant tucked in the heart of Thamel, Kathmandu — opens its doors to a two-hour cultural and culinary journey unlike anything else in the city.
Your welcome: Raksi
The evening begins not with a menu, but with a gesture. You are greeted with a small glass of Raksi (रक्सी) — a homemade distilled millet liquor that has warmed Himalayan homes for centuries. It's an introduction that tells you immediately: this is not a tourist dinner. This is the real thing.
The food: six courses of Thakali heritage
The Thakali people of the Mustang valley are considered among Nepal's finest cooks, and their cuisine — buckwheat-forward, ghee-rich, spice-balanced — rarely makes it outside Nepal. Tonight, it comes to your table in six courses:
Starters
Kanchemba (कन्चेम्बा) — crispy buckwheat bites made with ghee, a Thakali household classic
Momo (म: म:) — handmade steamed dumplings filled with minced chicken or vegetables
Soup
Alankhu (आलङ्खु को झोल) — a nourishing radish and spinach soup with buckwheat
Main course
A generous spread arrives at your table: Seasonal mixed vegetable curry, tempered spinach saag, black lentils with traditional spices, steamed local rice, buckwheat pancakes (Ghoken), herbed potatoes (Alu Bhujuri), and two house pickles — a tomato-Sichuan chutney and a tangy hog plum or raw mango achar. A choice of paneer in rich gravy, slow-cooked chicken ledo, or citrus-marinated crisp-fried fish.

Dessert
Sikarni (सिकार्नी) — flavoured hung curd, silky and sweet
Nepali Chiya (चिया) — spiced milk tea brewed the traditional way, the perfect close to the meal
