Cook 2 of Oaxaca's 7 traditional moles in a 100% gluten-free kitchen, hosted by Quetzalli, a young Zapotec cook in her own family home in Tlalixtac — the Central Valleys village where she was born and where she safeguards recipes from her grandmothers and neighboring communities.
After meeting at Templo de San Matías Jalatlaco, you'll be driven to Quetzalli's home in Tlalixtac, where the entire experience takes place. The class opens with a cup of traditional Oaxacan chocolate while you get to know your host. From there, you'll explore organic ingredients sourced from local market producers — dried and fresh chiles, seeds, herbs, and spices — and learn the toasting and grinding techniques that define authentic mole.
You'll grind salsas, shape tortillas by hand on a comal, and prepare two of Oaxaca's seven moles (selected based on what's in season). Along the way, Quetzalli shares the cultural meaning of mole in Zapotec celebrations and family life. You'll also mix a seasonal mezcal cocktail — or mocktail — with fruit like mango, watermelon, pineapple, or strawberry.
The class closes around the family table, sharing the meal you cooked together, followed by a homemade dessert. Every dish is naturally gluten-free, making this a rare safe option for celiac and gluten-sensitive travelers in Oaxaca. Round-trip transport from Jalatlaco is included. Max 8 guests.
