The corn experience can be booked independently or with additional options—such as goat cheese making; to enjoy the complete experience, choose the "mono en bijao."
The "Corn Experience" is a guided culinary workshop where participants will learn to prepare traditional Panamanian dishes. Corn is fundamental to all Latin American cultures, including our own here in Panama. Learn about local traditions as your guide shares stories from Panamanian folklore. The corn tortilla is a staple of the traditional Panamanian breakfast, often serving as a substitute for bread. During this experience, you will also prepare *almojábanos*—a delicacy found exclusively in Panama's Chiriquí province.
This culinary experience takes place on an interactive farm, where you can enjoy direct contact with the animals. During your visit, you will have the opportunity to connect with the animals and experience life on the farm. The animals you may encounter include deer, calves, goats, rabbits, ducks, horses, pigs, and many others.
You may add other experiences to your tour:
Goat Cheese Making: Your instructor will teach you how to milk a goat (optional). For many, this will be their first time milking; but don't worry—you'll get the hang of it in no time! Fresh milk is the key to making the best cheese. In this experience, you will learn how to prepare cheese and then enjoy tasting it alongside your corn fritters. Choose this option only if you wish to make cheese rather than the "Mono en Bijao."
Mono en Bijao: If you choose this option, the package also includes the Goat Cheese Making activity and the "Corn Experience." This is a half-day tour where you will meet your host in the morning to embark on a delicious culinary adventure. You will personally harvest the leaves from the *bijao* tree—a plant native to humid tropical forests. The "Mono en Bijao" represents the traditional lunch of rural farmers. The *bijao* leaf wraps and protects the food—acting as a natural lunchbox—allowing farmers to carry their meal with them out to the fields. The dish consists of rice, plantains, and meat—ingredients that you will cook yourself. You will also learn how to prepare *arroz con leche*, a traditional Panamanian dessert that is often prepared to celebrate a baby's first tooth. Additionally, you will be able to harvest lemons (if in season)—or we will provide them for you—to make a refreshing lemonade sweetened with raw sugarcane.
