Taste five Alsatian specialities with a guide, each at its own market stall or artisan shop, from Place Broglie to Petite France.
Meet your guide at Place Broglie and spend an hour and a half walking across the Grande Île, tasting five Alsatian specialities. Each stop covers a single product, bought where it is made or sold: a delicatessen, a biscuit maker, a baker, a cheesemonger and a gingerbread house.
All five tastings are included in the price.
The walk begins at a charcuterie shop, where your guide introduces Alsatian charcuterie at a producer's counter: presskopf, a set terrine of pork, or country bacon and saucisse de viande, depending on what is on offer that day. Your guide explains how these products fit into the regional table and how Alsatian charcuterie is made.
The route then reaches a biscuit maker near the cathedral for bredele, the small biscuits traditionally baked during Advent and now sold all year, and a slice of kougelhopf, the almond and raisin brioche baked in a fluted ring mould. Your guide explains the difference between the sweet and savoury versions and why the mould matters.
At a bakery on rue des Orfèvres you taste a bretzel, knotted by hand on the premises and made with organic Alsatian wheat flour, plus one variant such as gruyère or bacon. Your guide explains the shape, the brief bath in an alkaline solution that gives the crust its colour, and why the bretzel became the sign hung outside Alsatian bakeries.
The fourth stop is a cheesemonger on rue des Tonneliers, where more than two hundred cheeses are matured in the cellars. You taste an AOP munster, served with cumin as it usually is in the region, and your guide covers how the cheese is made and why it smells stronger than it tastes.
The walk ends in Petite France at a gingerbread house that has been making pain d'épices since 1933, where you taste a plain version and a filled or glazed one.
