Step into a beautifully restored 100-year-old Kyoto machiya townhouse with a private inner garden, tucked into the quiet Nijo district. Your class begins and ends here, in a peaceful traditional setting away from the crowds.
Begin by becoming an itamae for the day — chef's coat on, hands washed. This is a hands-on class led personally by a professional omakase chef who runs his own sushi restaurant in Kyoto, so you learn the real craft and can ask anything along the way.
Start with a dashi tasting to understand umami, the foundation of all Japanese cuisine. Learn the story of how Edomae sushi was born from the need to preserve fish before refrigeration existed. Watch as the chef demonstrates the five classic Edomae techniques — curing, marinating, simmering, poaching, and kelp-curing — using the same quality of fish served at his omakase counter.
Then it's your turn. Season sushi rice with red vinegar, roll maki, and shape nigiri with your own hands, each piece tied to the techniques you just learned. Blend your own miso, then sit down and eat the sushi you made. As an optional add-on, enjoy a sake tasting and pairing led by a certified sake sommelier, who shows you how Japanese sake is matched to sushi.
The experience lasts about 2 hours and is taught in English, Spanish, or Japanese, with interpretation available. Classes are kept to a small group of up to 6 guests for personal attention; private sessions and larger groups are also available, with group discounts. No experience is needed — complete beginners and families are welcome. Vegan, vegetarian, gluten-free, halal, and allergy-friendly options can be arranged when requested at booking.
