Visit Koshiyama Kanseido, a historic Japanese confectionery founded in Kanazawa in 1888. The shop is located in Owaricho, a traditional merchant district between Omicho Market and the famous Higashi Chaya District.

Kanazawa has long been known for its rich tea culture, and beautifully crafted wagashi have played an important role in tea gatherings, hospitality, celebrations, and seasonal traditions.

During this experience, make four seasonal jo-namagashi, elegant Japanese sweets known for their delicate shapes, colors, and connection to nature and the changing seasons.

You will create two different seasonal designs and make two pieces of each, for a total of four handmade wagashi.

Begin by watching the confectionery staff demonstrate how each design is made. Follow the movements step by step as you shape, press, form, and decorate the sweets yourself.

No previous cooking or confectionery experience is required. The workshop is designed for beginners and is highly visual, allowing guests to learn by watching the demonstration and following along.

The exact designs change throughout the year and may be inspired by seasonal flowers, plants, landscapes, festivals, or other elements of Japanese nature and culture.

As you create each piece, discover how wagashi express more than flavor alone. Their colors and shapes are designed to reflect the season and complement Japan's traditional tea culture.

At the end of the workshop, package all four sweets you made and take them home with you.
