Most mezcal experiences happen inside a palenque. This one starts on a mountain trail. Over 3.5 hours, a small group of maximum 8 hikes into the hills outside Oaxaca to see wild agaves growing where they belong — in the native landscape that shaped mezcal in the first place.

The route covers roughly 1.7 km at a moderate difficulty, with some elevation gain toward a lookout point. Along the way, your guide points out the iconic wild agave species of the region — tobalá, tepeztate and others that only grow at altitude — and explains the plant's anatomy, reproductive cycle, and the differences between wild and cultivated varieties. You'll also stop at a family-owned cultivated agave field to see how care and cultivation compare to what grows in the wild.

Interwoven with the botany, your guide covers the history and origins of mezcal and points out the traditional medicinal plants Oaxacan communities have used for generations. At a scenic stop on the trail, you'll take part in a guided educational mezcal tasting — outdoors, next to the plants the spirit comes from.
