Ethiopia is a paradise for meat lovers, and this culinary adventure takes you beyond typical restaurant dining into the heart of Ethiopia’s food culture.
Your journey begins with a legendary dish: raw beef (“tere siga”), which carries deep cultural roots and is tied to Ethiopian history. Legend has it that warriors during the Battle of Adwa (1896) ate raw meat to stay strong and move quickly without building campfires that could reveal their position. Tere siga remains a proud national tradition enjoyed in special butcher houses.
Next, taste tibs, succulent roasted meat, usually beef or lamb, seared in a sizzling clay pan with onions, peppers, and Ethiopian spices. Tibs is festive, communal, and always best shared with friends over injera.
Then comes the crown jewel of Gurage cuisine: kitfo. This minced beef dish is enriched with niter kibbeh (Ethiopian spiced clarified butter) and mitmita (a chili blend). Served raw, lightly warmed (“leb leb”), or fully cooked, it’s a favorite for feasts and holidays. Kitfo is considered one of the most refined dishes in Ethiopia.
