Daniela Thierstein lights the fire under her copper cauldron at 5am. You arrive at her farm in the Justistal at 1,400m for breakfast: warm Alpkäse, farm eggs, bread baked that morning.
8am. You get in a van in Interlaken. Twenty-five minutes later you're at the edge of the Justistal, a valley above Lake Thun that most tourist maps don't label. You walk 20 minutes up to Daniela Thierstein's farm.
Daniela has been up since 4am. The fire under the Chäschessi, the copper cauldron, went on before sunrise. By the time you arrive, the Alpkäse is already in the press. You smell it before you see the dairy.
Breakfast first. Fresh Alpkäse, warm, slightly crumbly. Soft-boiled eggs from Daniela's hens. Butter from the morning milking. Coffee in large cups. Bread baked the same morning. The valley walls are steep on both sides. 250 cows graze the slopes above. You hear them.
Then the dairy. Daniela walks you through every step she ran before you arrived: the morning milk, the heat building in the Chäschessi, the curd forming, the long-handled lyre cutting it, the whey draining off, the wooden molds. She produces 700 wheels this way every summer, May to September, on Tuesdays and Thursdays. The Thierstein farm has been part of the Chästeilet cooperative since 1739; 15 families sharing the same Justistal pasture under the same rules for nearly three centuries.
You can buy Alpkäse directly from Daniela before you leave. CHF 20 per kilo. Cash only.
Good for: families with children who need to touch things, hold things, ask questions that get real answers. Couples who want a morning that has a logic to it. Anyone who wants to understand where Swiss cheese comes from before they eat it at a restaurant that evening.
Not for: guests who need to be back in Interlaken before noon, or anyone with animal allergies.
