Begin with pickup in Oaxaca City and a cup of coffee from a local producer from Sierra Sur. Together, choose the menu for the day, take a short walk to the local market in Xoxocotlán to select fresh ingredients, then return to the farm for a garden tour and ingredient harvest.
Practice traditional techniques (comal, metate, molcajete, wood fire), make tortillas using a wooden press with nixtamalized corn, prepare a multi‑course meal including a mole of your choice, and enjoy a tasting under the trees.
Make in‑house chocolate and enjoy a small mezcal tasting from local producers. All recipes, tips for stovetop/oven adaptations, and a digital recipe pack are included.
