Make handmade udon from scratch and cook it Nagoya style in this hands-on class. Enjoy a guided miso tasting, prepare a side dish and Japanese dessert, and discover authentic local food culture.
Experience the food culture of Nagoya by making handmade udon and cooking it Nagoya style in this fun, hands-on class held in central Nagoya.
Start by creating udon noodles from scratch using only flour and water, following the traditional local method. You will knead, roll, and cut the dough by hand in a simple and enjoyable process.
While the dough rests, learn how to make authentic Japanese dashi from kombu and bonito flakes. You will also enjoy a guided miso tasting led by a certified miso sommelier. Miso is one of Japan’s traditional fermented foods, and you will discover the unique flavors of several varieties from across Japan.
Next, cook your handmade noodles in a rich miso broth using Nagoya’s famous red miso. Each guest prepares their own bowl in a personal clay pot with traditional toppings.
You will also make a refreshing cucumber and seaweed salad and a light tofu dessert with matcha.
After cooking, sit down and enjoy the meal you created together in a relaxed and friendly atmosphere.
This experience is inspired by my own journey of living abroad for over 10 years. During that time, I joined local cooking classes, learned traditional dishes, and connected with people through food. Through these experiences, I came to believe that to truly know a country, it is important to understand its food.
That is why I created this class. I hope that through cooking and sharing a meal together, you will not only learn Japanese cuisine but also come to love Japan and create a special, memorable moment during your visit.
