Sunday is the one day Tlacolula comes alive as Oaxaca's largest indigenous open-air market — and this small-group tour (max 6) is built entirely around it. Skip the commercial distillery circuit and spend the morning with a family-owned palenque in the Valles Centrales, where mezcal is still made the traditional Zapotec way.

Your bilingual guide (English or Spanish) picks the group up in central Oaxaca at 9:15 am. You'll walk the agave fields to see how espadín and wild varieties are cultivated, then follow the full production process at the palenque — from roasting and milling to fermentation and distillation. A guided tasting of up to 8 distinct mezcals follows, alongside curados and cremas, the traditional flavored mezcal drinks rarely offered on standard tours. Choose two bottles from a curated selection to take home.

Afterward, head into Tlacolula itself. Wander the Sunday market where Zapotec vendors trade as they have for centuries, taste traditional regional breads, and step inside the historic church to learn why it matters to the community. You'll break for lunch at the market — everyone chooses their own dish from the stalls — before heading back to Oaxaca.
