Forget the white tablecloths. Lima was one of the world's great food cities long before anyone started handing out awards. Indigenous crops, Spanish livestock, African ingenuity, Chinese woks and Japanese knife skills have collided here for centuries. Tonight we're eating the evidence. Over four hours and 14+ tastings, we'll tear through markets, neighbourhood eateries and historic institutions to find the Lima that locals actually eat.
First stop: the Amazon. Chaufa Amazónico takes the fried rice born from Chinese migration and sends it into the rainforest, loading it with Amazonian ingredients and fragrant herbs. Alongside comes tacacho, smoky plantain pounded with pork crackling and hit with bright ají de cocona. China to the jungle in a couple of mouthfuls. Not bad for a start.
Then tackle papa rellena. Peru grows thousands of varieties of potato, but we're particularly fond of the idea of stuffing one, frying it golden and eating it with an ice-cold glass of purple chicha morada.
Next comes the heavyweight. Ceviche is practically a religion in Peru, and we're not wasting your appetite on an average one. Fresh fish meets lime, chilli and onion in a dish with nowhere for bad ingredients to hide. Follow it with crisp yuquitas
Then it's time to track the smoke towards one of Lima's defining street foods: anticuchos. Beef heart hits glowing charcoal until smoky around the edges and beautifully tender within. Once associated with Afro-Peruvian cooks making brilliance from overlooked cuts, anticuchos are now firmly embedded in the national appetite. Alongside come quail eggs and fragrant ají de huacatay, Peru's punchy black-mint sauce.
We'll head into Pueblo Libre, one of Lima's oldest neighbourhoods, where freshly baked caramanducas bring a warm hit of anise. Then Peru's Japanese connection reappears in yucamochi, turning humble cassava into a chewy little nod to the country's Nikkei culinary tradition.
There are 14+ tastings to conquer, so we'll keep a few surprises off the page. But our final stop deserves some attention. Pull up a chair at one of Lima's historic eateries and raise a properly made pisco sour. Then attack tacu tacu, the Afro-Peruvian masterstroke that transforms rice and beans into a crisp-edged comfort-food heavyweight. Along side it we'll have lomo saltado. Beef, onions and tomatoes explode around a fiercely hot wok with soy sauce. Chinese technique, Peruvian ingredients and absolutely no concern for culinary borders. If one plate could explain why Lima eats the way it does, this might be it.

Meet at the statue of Túpac Amaru II in the centre of the Plaza Túpac Amaru. It is easily accessible by taxi from most of the city's hotels. Uber is available in Lima and is a convenient way to reach the meeting point.
