Miso is a typical Japanese seasoning, and there are many varieties.
Nagoya has a thriving fermentation culture, and there are many stores that have been producing miso, soy sauce, and mirin for centuries.
Nagoya's miso is called “aka-miso” (red miso), which is darker in color and a little salty in contrast to Kyoto's white miso, but when made into ramen, it is very mild and goes very well with vegetables and noodles.
