Start your morning surrounded by wings. Just 45 minutes from Bogotá, the Hummingbird Observatory in La Calera is a conservation sanctuary where you can observe up to 14 species of hummingbirds in their natural habitat — including the extraordinary sword-billed hummingbird, one of the most jaw-dropping birds on the planet. You'll spend three hours at close range, watching them hover inches away as they feed from garden blooms and specially designed nectar stations. From there, we head to the colonial village of Guatavita for lunch at Embajada Criolla, a beloved local restaurant known for its traditional Cundinamarcan cuisine — the kind of honest, hearty Colombian cooking that doesn't make it onto any tourist menu.

After lunch, we drive to the sacred Laguna de Guatavita — the lake that gave birth to the legend of El Dorado.
