In this unique workshop, you will embark on a journey through flavors, ancient gestures, and stories of Ligurian tradition in an intimate and familiar atmosphere.
1. Authentic ingredients
We will begin by observing and touching the essential ingredients for preparing traditional Genoese pesto. From selecting DOP basil to the aroma of Vasalico garlic, pine nuts, Parmigiano Reggiano, pecorino cheese, extra virgin olive oil, and coarse salt, you will discover the unique characteristics of each ingredient and how to recognize its quality.
3. The mortar technique
After presenting the traditional tools, such as the marble mortar and wooden pestle, Camilla will show you the original technique for crushing the basil and creating a fragrant, velvety cream. Then it will be your turn: you will make your own pesto, with your own hands, following the original recipe.
4. History, memories, and the world championship
During the preparation, Camilla will share anecdotes, curiosities, and stories related to pesto and Ligurian cuisine. She will recount her experience at the world championship, how her passion was born, and why she chose to share this knowledge with others.
5. Final tasting
Once ready, we will taste the freshly prepared pesto together, paired with Genoese focaccia to bring out every nuance. A convivial moment to savor the fruit of your labor and share the experience with the other participants.
