Prepare pesto and walnut sauce in a mortar with Camilla Pizzorno, World Champion, and taste them with a local menu: focaccia and pesto, pansoti with walnut sauce, pandolce, liqueurs, and Ligurian wine.
The only cooking class in which a world champion, Camilla Pizzorno, winner of the World Pesto Championship, reveals her recipe, her secrets... and lets you taste an authentic Ligurian menu.
1. The ingredients
You will be welcomed in a typical Ligurian garden surrounded by greenery during the summer, or in a covered and heated outdoor area in the winter months, for an authentic experience at any time of year.
We will begin by exploring the fundamental ingredients of tradition: the aroma of Genovese D.O.P. basil, Vessalico garlic, Italian pine nuts, 24-month aged Parmigiano Reggiano, Fiore Sardo pecorino cheese, extra virgin olive oil from the Ligurian Riviera, and coarse salt.
You will learn to recognize their quality and role in each step.

We will taste the freshly prepared pesto, served with typical Genoese focaccia.
4. Walnut sauce made with a mortar
We will continue the experience by preparing walnut sauce with a mortar, an ancient recipe that is now rarely made with a mortar. Creamy and delicate, it is made from simple, genuine ingredients: Italian walnuts, cream, garlic, pine nuts, extra virgin olive oil, and a touch of marjoram.
5. Tasting of walnut sauce
You will taste the walnut sauce with a plate of pansoti, a typical fresh stuffed pasta from our tradition, paired with this sauce.
6. Traditional dessert and final toast
The tour will end with Genoese pandolce, accompanied by a wine from the Ligurian Riviera and Italian liqueurs and grappas such as limoncello, mirto, and Amaro Camatti.
7. A souvenir to take home
To make your experience unique, you will receive the World Champion's recipe in PDF format, along with photos and videos of the experience and a small gift to take home with you as a little piece of Liguria.

Camilla Pizzorno is the youngest winner in the history of the World Pesto Championship, a title she won by beating over a hundred competitors from all over the world, including internationally renowned chefs.
Born and raised among the scent of basil and the skilled hands of her grandmother, she has transformed a family tradition into a gastronomic excellence.
